Chuckanut Bay Distillery's first ever Apple Brandy-Cask Finished Whiskey at Barrel Strength - limited availability!
It all begins with our Muzzleflash light whiskey handmade in small batches using grains from a family farm located just 30 miles north of the distillery. Like all our Muzzleflash batches, this spirit began with a mash of equal parts corn, rye, and wheat. It underwent the typical double distillation common to American whiskies, but then returned to the still for a third distillation, following the tradition of its Irish cousins. Once at proof, we place the hearts of the resulting distillate into the highest quality 53 gallon white oak barrels that once housed our award winning Bourbon. Then we wait for two years..
Once the spirit has aged to perfection, the whiskey was racked into a emptied, Apple Brandy barrel from Bellewood farms here just outside of Bellingham where it aged an additional 12 months. The Brandy imparts a subtle sweetness to the whiskey, derived from the residual sugars and fruitiness of the brandy. The result is truly exceptional. The hints of honey deepened, and the grain spirit beautifully integrated with notes reminiscent of a walk through an orchard on a summer day.
