It all begins with the bourbon, of course. Ours is handmade in small batches made entirely from locally grown grains - corn, wheat, and rye from a family farm located just 30 miles north of the distillery. We mash and ferment the ingredients in our traditional wooden fermenters before transferring them to the pot still for distillation. Once at proof, we place the hearts of the resulting distillate into the highest quality 53 gallon charred American White Oak barrels. Then we wait.
Once the spirit has aged to perfection, the bourbon was racked into a just-emptied port barrel from local winery, Dynasty Cellars, where it aged an additional 6 months. The port barrel imparts a subtle sweetness to the bourbon, derived from the residual sugars and fruitiness of the port wine. This sweetness manifests as notes of ripe berries, figs, and plums, lending a luscious and fruity undertone to the bourbon. Additionally, the tannins present in the port barrel contribute to the bourbon's mouthfeel, enhancing its texture and adding a velvety smoothness. These tannins can also introduce hints of spice and dryness, balancing out the sweetness and adding complexity to the flavor profile.
