5-8 mint leaves
1 oz. Simple syrup
3/4 oz. Lime juice
1 1/2 oz. Chuckanut Bay Slow-crafted Gin
In a cocktail shaker muddle the mint leaves.
Add remaining ingredients and ice.
Shake till well combined and chilled.
Double strain into a cocktail glass.
Top with ginger beer.
Garnish with mint sprigs.
