2 oz. Chuckanut Bay Distillery Slow Crafted Bourbon
1/2 oz. Ginger Apple Shrub by Shrub Farm
3/4 oz. Lime juice
In a cocktail shaker add ingredients and ice. Shake vigorously for 12-15 seconds, strain into a rocks glass over one large rock. Top with Ginger Beer, and garnish with a spring of thyme.
